Bell Pepper Jack O'lanterns with Vegetables and Dip
3 large, flat-bottomed orange (1) or yellow (2) bell peppers
1 cup of dip
Assorted raw vegetables
1 cup nonfat Greek yogurt or nondairy yogurt
3/4 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dill weed
1/4 tsp salt
1/4 tsp Worcestershire sauce
Fresh chopped chives (sprinkle on dip)
Core peppers with a sharp paring knife and pull out stems and ribs. Use a
soup spoon to carefully scoop out remaining ribs and seeds.
Mix dip ingredients in a small bowl and spoon into orange pepper and
arrange vegetables in the remaining 2 peppers.
