Roasted Sweet Potato Boats with Crispy Chickpeas & Spicy Lime Drizzle
Looking for a simple meal that is satisfying, flavorful, and made with whole-food ingredients? These Roasted Sweet Potato Boats with Crispy Chickpeas are packed with fiber, plant-based protein, colorful vegetables, and healthy fats.
Sweet potatoes become tender and caramelized in the oven while seasoned chickpeas roast until crispy. A bright lime and honey drizzle adds just the right amount of sweetness and heat.
This is a great option for a heart-healthy or anti-inflammatory meal and makes an easy meatless lunch or dinner.
Ingredients
For the Sweet Potato Boats
- 3 medium sweet potatoes
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon smoked paprika
- ½ teaspoon ground cumin
- ½ teaspoon garlic powder
- Salt and black pepper, to taste
For the Crispy Chickpeas
- 1 (15-ounce) can chickpeas, drained, rinsed and thoroughly dried
- 1 tablespoon extra-virgin olive oil
- ½ teaspoon smoked paprika
- ½ teaspoon chili powder
- ¼ teaspoon ground cumin
- Pinch of salt
For the Spicy Lime Drizzle
- 2 tablespoons raw honey
- Juice of 1 fresh lime
- ¼–½ teaspoon red pepper flakes, depending on your preferred heat
Optional Toppings
- Fresh cilantro
- 2 tablespoons pumpkin seeds
- Crumbled feta
- Plain Greek yogurt
- Sliced avocado
- Fresh lime wedges
Instructions
1. Roast the Sweet Potatoes
Preheat oven to 400°F and line a baking sheet with parchment paper.
Wash and dry the sweet potatoes, then cut them in half lengthwise. Place them cut-side up on the baking sheet and brush with olive oil.
Sprinkle with smoked paprika, cumin, garlic powder, salt and pepper.
Roast for approximately 30–35 minutes, or until the sweet potatoes are tender and easily pierced with a fork.
2. Make the Crispy Chickpeas
While the sweet potatoes roast, drain and rinse the chickpeas. Pat them very dry with a clean kitchen towel or paper towel. Removing excess moisture helps them become crispier.
Toss the chickpeas with olive oil, smoked paprika, chili powder, cumin and a pinch of salt.
Spread them in a single layer on the baking sheet around the sweet potatoes.
Roast until golden and crispy, about 25–30 minutes, shaking or stirring them halfway through.
3. Make the Lime Drizzle
While everything is roasting, whisk together the honey, fresh lime juice and red pepper flakes.
Taste and adjust the lime or spice to your liking.
4. Assemble the Boats
Once the sweet potatoes are tender, gently fluff the centers with a fork to create your sweet potato boats.
Top each sweet potato half with crispy chickpeas and drizzle with the spicy lime mixture.
Finish with fresh cilantro and your choice of optional toppings such as pumpkin seeds, Greek yogurt, avocado or a small amount of feta.
Serve warm.
Why We Love These Sweet Potato Boats
Sweet potatoes provide fiber and are naturally rich in beta-carotene, which the body can convert to vitamin A.
Chickpeas add plant-based protein and fiber, helping make this simple recipe more satisfying.
Extra-virgin olive oil provides monounsaturated fat and is a staple of Mediterranean-style eating.
Lime, herbs and spices add plenty of flavor without relying on heavy sauces or highly processed ingredients.
For an extra boost of protein, add a spoonful of plain Greek yogurt or serve alongside grilled chicken or fish.
Easy Ways to Customize It
These sweet potato boats are easy to customize depending on what you have in your kitchen.
Want more protein? Add grilled chicken, salmon, shrimp or Greek yogurt.
Want more crunch? Sprinkle with pumpkin seeds or chopped walnuts.
Want more greens? Add a handful of fresh arugula or spinach before serving.
Want it dairy-free? Simply skip the feta and Greek yogurt.
Want it vegan? Use maple syrup instead of honey.
Storage
Store leftover sweet potatoes and chickpeas separately in airtight containers in the refrigerator for up to 3 days.
For the crispiest chickpeas, reheat them in the oven or air fryer rather than the microwave.
