This flavorful taco salad delivers all the taste you love—without the excess sodium. It’s perfect for a family meal, meal prep, or a healthier twist on taco night.

2 heads iceberg lettuce, chopped

6 Roma tomatoes, diced

2 bunches scallions, chopped

2 pounds lean ground beef

2 packets Mrs. Dash® Low-Sodium Taco Seasoning

2 cups sharp cheddar cheese, shredded

1 cup low-sodium black beans

1 cup low-sodium corn
Directions

Cook the beef: In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat. Add the taco seasoning and ¾ cup water. Simmer for several minutes, stirring occasionally, until the mixture thickens.

Prepare the salad: While the beef is cooking, chop the lettuce, tomatoes, and scallions. Arrange the lettuce in a large bowl or on individual plates.

Assemble: Top the salad with seasoned beef, shredded cheddar cheese, tomatoes, and scallions. Add black beans and corn if desired.
