Yields: 8 servings
Cheesy Avocado Quesadillas Ingredients
-
1 tablespoon olive oil
-
1 pound ground beef
-
1 tablespoon taco seasoning mix
-
1 (4.5-ounce) can chopped green chiles, drained
-
8 (8-inch) flour tortillas
-
1 (16-ounce) can refried beans, warmed
-
2 ripe avocados, peeled, pitted, and sliced
-
2 cups shredded mozzarella cheese
-
2 tablespoons fresh cilantro, chopped (optional)
How to Make Cheesy Avocado Quesadillas
-
Preheat oven to 400°F. Line a baking sheet with parchment paper and set aside.
-
Heat olive oil in a skillet over medium-high heat. Add ground beef and cook until browned, about 3–5 minutes, breaking it up as it cooks. Drain excess grease, then stir in taco seasoning and green chiles. Remove from heat.
-
Assemble the quesadillas by spreading refried beans over one tortilla. Top with seasoned beef, avocado slices, and shredded mozzarella. Place a second tortilla on top. Repeat to make 4 quesadillas.
-
Transfer quesadillas to the prepared baking sheet and bake for 8–10 minutes, or until the cheese is melted and tortillas are lightly crisp.
-
Remove from oven, slice, and serve warm. Garnish with fresh cilantro if desired.
Serving Tip
Serve with salsa, sour cream, or guacamole for an extra flavor boost.
