Ingredients:

1 small bag fresh baby spinach

1 dash black pepper

1 dash Herb and Garlic Seasoning (ensure it’s low-carb)

8 oz low fat shredded mozzarella cheese (or other low-carb cheese like cheddar)

6 thin-sliced chicken breasts

1 container (8 oz) fat free cream cheese

1 scoop of Vanilla Protein powder (sold at our office)

1/4 cup olive oil

1/2 cup chicken bone broth

1 large package sliced mushrooms

2 cloves garlic, minced (optional, for extra flavor)

1/4 cup grated Parmesan cheese

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Chicken: In a 9×13-inch baking dish, lay out the chicken breasts in a single layer. Top with fresh baby spinach and sliced mushrooms. Sprinkle with black pepper and Herb and Garlic Seasoning.
  3. Prepare Sauce: In a bowl, soften the full-fat cream cheese. Whisk it together with the olive oil, chicken bone broth, and protein powder until smooth. If desired, mix in minced garlic for extra flavor. Pour this mixture evenly over the chicken, spinach, and mushrooms.
  4. Bake: Cover the pan with a piece of foil, but don’t seal it completely. Bake in the preheated oven for 20 minutes.
  5. Uncover and Continue Baking: Remove the foil and bake uncovered for another 20-25 minutes.
  6. Add Cheese: Sprinkle shredded mozzarella cheese (and Parmesan if using) over the top and bake uncovered for an additional 10 minutes or until the cheese starts to brown.
  7. Cool and Serve: Let the dish cool for 10 minutes before serving.
