Blueberry Breakfast Bake Recipe
- 1 cup organic cottage cheese (full-fat or low-fat)
- 2 organic eggs
- 1/3 cup organic maple syrup or honey
- 1/2 cup organic unsweetened almond milk (or milk of choice)
- 1 teaspoon organic vanilla extract
- 1 tablespoon organic coconut oil (melted)
- 1 cup organic oat flour (or blend rolled oats to make flour)
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1 teaspoon organic ground cinnamon
Add-ins:
- 1 cup organic fresh or frozen blueberries (do not thaw if frozen)
- 1/4 cup organic chopped nuts (optional – walnuts or almonds)
- 2 tablespoons organic chia seeds or flaxseeds (optional for extra fiber)

Instructions
- First set your oven to 350°F (175°C).
- Then grease an 8×8-inch baking dish with coconut oil or line it with parchment paper.
- After that, in a large mixing bowl, whisk together the cottage cheese, eggs, maple syrup (or honey), almond milk, vanilla extract, and melted coconut oil until well combined.
- In a separate bowl, combine oat flour, baking powder, baking soda, salt, and cinnamon. Stir to mix evenly.
- Gradually add the dry ingredients into the wet mixture, stirring gently until fully incorporated. Avoid overmixing.
- Carefully fold in the blueberries, chopped nuts, and seeds (if using), ensuring they are evenly distributed.
- Pour the batter into the prepared baking dish and spread it evenly.
- Sprinkle extra blueberries and a light dusting of coconut sugar or nuts on top if desired.
- Place in the preheated oven and bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Allow the bake to cool for about 10 minutes before slicing.
